Crystal Gummy Candy (Kohakutou) (grapefruit, watermelon, coconut)

Kohakutou is a Japanese sweet that looks strikingly like a crystal or gemstone. These gummy candies are made of a mixture of sugar, water/juice, agar agar powder and flavors/colors. All edible!

Do keep in mind these are mainly sugar..so they will be very sweet...try not to over do them. ;) also your blood sugar level will spike! Just FYI, I can not substitute the sugar. .it must be granulated sugar to get them to work.

I try to keep the colors & flavors as natural as possible but I may have to use a little flavor or color additive..depending on the desired look. The gold is edible luster dust mixed with lemon extract.

If kept in a dry place, they can last up to 2 months. (humidity is the enemy with these candies. if the outer shell gets too humid it will melt and you will have a syrupy mess, fyi. still edible but a mess.)
