Citron Diamonds

Inspired by the classic French calisson, these Citron Diamonds are something uniquely my own.

A smooth almond base is blended with candied grapefruit peel and candied ginger, accented by cardamom and clove for warmth and spice. Each of the ten diamonds are hand cut and dipped in white chocolate — a modern nod to the traditional royal icing of a calisson.

Bright, spiced, and elegant, they’re a confection that lets every flavor shine.
